The aging of Giusti Balsamic Vinegar of Modena takes place in wooden barrels from the family heritage used for decades or centuries. According to regulations, the aging period cannot be shared and indicated on the label, and it varies based on the recipe followed by the producer. Moreover, the age of the barrels and the liquid they contain, never being completely emptied, greatly affect the flavor and consistency of the final product.
