Fakes Soup by Greeks Mommy Cooks

Helene from @Greekmommycooks brings you a filling, healthy, and very easy to make lentils soup recipe, perfect for fall season.

INGREDIENTS:

  • 2 medium carrots chopped
  • 1 onion chopped
  • 2 large Bay Leaves
  • 3 garlic cloves chopped
  • 1 Teaspoon Oregano
  • 6 cups water
  • 1 cup Olive Oil
  • 1/2 pound lentils, (half 1 pound bag) rinse well
  • 1/2 lb crushes tomatoes

PREPARATION: 

STEP 1

Boil 6 cups water and add the onion, garlic, tomatoes, and carrots

STEP 2

After a few minutes add the lentils, olive oil, salt and pepper.

STEP 3

Turn the heat to simmer and partially cover for 1hr 45 minutes.

STEP 4

Stirring a few times throughout.

Note: If the soup is too thick you can always add more water and stir.

Note: adding a little splash of red wine vinegar after the soup is done can give it a little kick. ⁣
