- Where does this sugar come from?
Cane sugar, star of Reunion Island Sugar cane appeared in 1663 in Reunion, at the time, it was used by settlers to make alcohol called "tracking". Today, the cultivation of sugar cane represents the main source of export income after tourism on Reunion Island. The cultivation of sugar cane is a traditional agricultural activity on the island of Réunion. Whether for extracting brown sugar, white sugar or making rum, sugar cane is one of the greatest treasures of the island. To make cane sugar, the sugar cane must be crushed to extract a juice. Grinding breaks up hard knots in the sugar cane and flattens the cane stalks. The juice is collected, filtered and sometimes processed and then boiled to remove excess water. After cooling, pots of juice are usually agitated rapidly to incorporate air and promote crystallization.
