Atlantis is a distinctive semi-soft warm-season cheese, washed in North Atlantic seawater and speckled with local species of umami-rich seaweed. Produced seasonally late spring to fall, it showcases the exceptional quality of grass-fed milk from our local farms. Aged for 45 days, Atlantis develops herbaceous notes of asparagus, grass, and nori, with a subtle, sea-like salinity that reflects our maritime region.
