Description
Combination of 3 traditional Majorcan ingredients: Ramallet tomato, sea fennel and Natural Flor de Sal. The ramallet tomato (striped tomato), a popular local tomato variety, contains less water than other tomatoes and is picked before it is fully ripe. Traditionally tied in bunches that are hung in a cool, dark and well-ventilated place to complete the ripening process, they are popular as an ingredient in Majorcan Pamboli — bread scrubbed with tomatoes and drizzled with olive oil. Sea fennel (Rithmum maritimum), a fragile plant that normally grows off the coast of the Balearic Islands, is very rare and very precious. Its fleshy leaves are traditionally preserved in vinegar and salt to imbue themselves with their characteristic aromatic structure. This traditional combination brings the flavor of Mallorca to every dish — try it with Pamboli (tomato bread with oil and salt) or Trempó (a summer salad of tomatoes, peppers and onions).
