We handcraft these delicious tender pastries, with a surprising texture, with a careful selection of almonds, egg yolks and sugar. By their main ingredients, we can say, that they are our Basque macarons, they contain 45% of almonds and egg yolks, instead of whites. We baptized this sweet, with this name to pay homage to its creator: José Mari Gorrotxategi, who popularized the Delicias de Tolosa and then the Xaxus.
