Description

These scallops (Aequipecten opercularis) come mainly from the Arousa estuary, purchased directly from the local seafood markets of Cambados, where the finest specimens are found. Each scallop passes through a seawater purification plant, then is sorted and cleaned entirely by hand before being hand-packed by size. They are preserved in a traditional brine made only with natural ingredients — no additives — resulting in a conserva of exceptional purity and quiet Galician craftsmanship.
