Plump Turkish raisins are hand-selected for their size and sun-dried to concentrate the grape flavor. Italian lemons and oranges are also carefully chosen. The scorza, or outer peel, of the oranges is lightly candied to preserve the fruit's perfumed oils. Rare South American candied citron adds depth, as its limited supply makes it a prized ingredient.
