Enjoy an award-winning 6-month cured Idiazabal cheese from Spain, a truly unique cheese. After letting the cheese mature for 1 month, they smoke it with Hawthorne or cherry wood. This process gives Etxegarai and Idiazabal cheese their characteristic piquant and nutty flavor. This long aftertaste is delicious when paired with nuts and quince.

This smoky rich Idiazabal cheese is enhanced with nuts and quince and red wines from the region enhance the experience of this pronounced sheepy finish.

Label info

Ingredients: Raw sheep's milk, salt, natural rennet, lactic ferments and preservative egg white lysozyme (E-1105). Not edible rind. Preservative on rind (E-202 and E-235). Aged over 60 days.
Remember to keep it in refrigerator for longer conservation. Wrap it in plastic film or use a cloth soaked in olive oil to cover it, as the traditional way.
