The octopus caught and sold by Los Peperetes is a cephalopod that requires a very specific maceration process to tenderize its meat and achieve the ideal texture. Living in rocky coastal seabeds, the octopus breeding season is typically September through April, which is when Los Peperetes conducts its careful, traditional "one by one" octopus fishing campaign. This careful harvesting by Los Peperetes breaks down the octopus's fibers to create its signature tender yet firm texture.
