We gently heat the milk to preserve its fresh flavor before adding natural rennet to curdle it. After draining the curds and pressing out excess whey, the cheeses are aged to develop complex flavors. Over 11 months of careful aging, the rinds acquire a natural hue without artificial additives. Our devotion to traditional techniques produces a one-of-a-kind, wholesome cheese with exceptional taste.
