Most Parmigiano is made from the milk of Friesian cows. This one is not.

Di Sola Bruna is made exclusively from the milk of the Bruna Alpina — a heritage Italian breed that produces less milk than most dairy cows, and considerably better. The higher casein content of Bruna Alpina milk means deeper flavor development during aging, which is why this Parmigiano tastes different from the moment it meets the palate.

Aged 24 months. The paste is golden-yellow and dense with tyrosine crystals — that satisfying crunch that signals time and craft working together. The flavor is sweeter and more aromatic than standard Parmigiano: notes of hazelnut, butter, and hay, without the sharp salinity that defines the mass-produced version.
