What Does PDO mean?

A PDO (Protected Designation of Origin) food product is recognized for its specific quality and reputation that are attributed to its origin.

This designation is part of a system used by the EU to protect the names of regional foods and ensure that only products genuinely originating in that region are allowed to carry this label. It is not enough to just come from the region, these products need to follow specified levels of aging, processing, ingredients, and anything else that makes this product unique.

You may see different acronyms depending on the country of origin. In France the PDO equivalent is appellation d'origine protégée (AOP), in Italy it is denominazione di origine protetta (DOP), and in Spain it is denominación de origen protegida (DOP).

Parmigiano Reggiano PDO

Parmigiano Reggiano, often called the "King of Cheeses," is renowned for its rich, nutty flavor and granular texture. This cheese is produced in specific regions of Italy and is made from high-quality milk before being aged for a minimum of 12 months.

Parmigiano Reggiano can be grated over pasta, risotto, or salads, enhancing dishes with its robust flavor. It can also be enjoyed on its own, paired with fruits, nuts, and a glass of crisp white wine like Pinot Grigio.

San Marzano PDO Tomatoes

San Marzano tomatoes, grown in the volcanic soil of the Sarno River Valley in Italy, are celebrated for their sweet, low-acid flavor and meaty texture. The PDO designation ensures these tomatoes are harvested at peak ripeness, are not genetically modified in any way, and are processed carefully by peeling and canning in their own juices.

San Marzano tomatoes are known for being the best in the world and are the secret behind making authentic Italian sauces. Use them as a base for marinara, pizza sauce, or any tomato-based dish. Their natural sweetness and low acidity mean you often need less seasoning, allowing the pure tomato flavor to shine through.

Monte Iblei PDO Extra Virgin Olive Oil

Torta del Casar PDO

Torta del Casar is a unique, creamy sheep's milk cheese from the Extremadura region of Spain. It's known for its intense, slightly tangy flavor and soft, spreadable texture.

Manchego Cheese PDO

Manchego cheese, produced in the La Mancha region of Spain, is made from the milk of Manchega sheep. Made from local sheep's milk, it has a firm texture and a rich, nutty flavor.

Only purebred Iberian pigs raised in the woodlands of the Los Pedroches Valley in Córdoba are eligible for the Los Pedroches PDO. This prestigious pata negra (black foot) Iberian pig is raised on a diet of acorns and natural pasture, only butchered in the early spring, and cured using traditional methods.
